Just as the Ducal Palace of Sassuolo, renamed the Delizia degli Estensi, has enchanted for centuries with the natural setting of its park with its suggestive fish pond and architecture embellished with baroque decorations, so the condiments of this Sassuolo reality have long enhanced the flavor of foods, delighting tables all over the world. Founded in 1970 by Sante Bertoni and now managed by his son Michele with his wife Alessandra and his son Enrico, maintaining the ancient traditions of the master vinegar makers of the Este court, the vinegar factory has evolved from the original, small family business, to the modern company it is today, with a building with 50 sets of 10 barrels each for the production of Traditional Balsamic Vinegar of Modena DOP and two other warehouses with 2,500 barrels and vats of various sizes, both reserved for Balsamic Vinegar of Modena IGP.

Here, at 350 meters above sea level, the native vines enjoy not only the ideal marl terroir for perfect growth but also a microclimate and sun exposure that allow the Lambrusco Grasparossa and Trebbiano grapes to ripen at their best and develop a high sugar content.
